Meat Balls (Gluten Free)- Perfect for School Lunches or Easy Dinners
Easy Freezable School Lunch Box Recipe
With the thought of school lunches looming….why don't you take a little time for some batch cooking, leaving your mornings stress free.
These meat balls make an easy yummy lunch, quick dinner or snack that can be just pulled out of the freezer ready to go! Did I mention they are gluten-free too?!
Ingredients
1 kilo mice
200 grams of passata
2 eggs
2 carrots grated
1 onion sliced finely
2 cloves of garlic grated or minced
1 teaspoon of dried basil
1 teaspoon of dried thyme
1/2 teaspoon paprika
Sprinkle of chilli and parsley (optional)
2 tablespoons of physillium
Salt and pepper to taste
Method
Prepare veggies. This can be done by using thermomix or food processor for speed.
Combine all ingredients and mix well.
Preheat oven to 180. Line a large tray with baking paper.
Using your hands…or better still the kids hands! (They love it!) Squeeze gently to form small balls.
Place on tray and bake for around 35 minutes.
To freeze. I allow them to cool, then place them on a chopping board lined with baking paper to avoid them sticking together. When they are frozen i then seal them in a bag ready to pop out for easy grab and go lunches.
These hold together great for larger rissoles that can be cooked on stove top or bbq too!
