Immune Boosting Cuddle Cup


With the cooler months closing in and the Winter Lurgies starting to creep around, I'd love to share with you my 'cuddle cup'. This is my 'go to' meal, when I feel under the weather.

It is packed with immune boosting medicinal herbs to help nourish into health....

Ingredients:

  • 3-4 cups Broth – (Chicken or Meat Or Vegetable broth) (Recipe Here)

  • 3 cloves minced garlic

  • ½ teaspoon of dried turmeric

  • 2 carrots grated

  • 1 onion, chopped

  • 2 cm fresh ginger grated finely

  • 1 medium chilli (optional) chopped finely

  • 1 Boy Choy, chopped

  • 8 Shitake Mushrooms sliced finely (optional)

  • Juice of one lemon (optional): high in vitamin C

Method:

  • Coat a stock pot with coconut oil (anti-bacterial and anti-viral) over medium-high heat.

  • Gently cook onion and garlic until translucent

  • Add carrot and spices. Cook until almost soft.

  • Cover with broth and stir.

  • Turn down to simmer and cook about 15 minutes or until vegetables are as soft as you like.

  • Add bok choy and mushrooms and cook an additional 5 minutes until done.

  • Remove from heat; add optional lemon juice.

  • You can also add leftover shredded chicken or poached eggs added protein if you wish.

Serve hot and enjoy.

Mushrooms: These are natures immune helping gifts. They are anti-inflammatory, aid our immune system and give our body nutrients and energy to heal.

Bok Choy: Provides an anti-inflammatory effect on your body and is jammed packed full of nutrients to support your body back to health,Lemon Juice: High in Vitamin C, which is used by immune system, giving your body the nutrients to enable you to heal faster.
