Quiche (Dairy and Gluten Free) Delicious
A quick dinner, grab and go breaky or nutrient packed lunch box snack.
This quiche is protein packed, it contains high levels of Omega 3 fatty Acids, which are valuable for control of cholesterol, lowering inflammation, good for the brain, the nervous system and also for growth and development.
It contains a rainbow of veggies, which have a multitude of antioxidants and good levels of beta carotene, a precursor to vitamin A which is great for the immune system.
Ingredients
1 sml sweet potato peeled, chopped and steamed
1 tomato finely chopped
6 eggs
1 x 400 g tin salmon
50 gram feta chopped finely
1 onion chopped
1-2 cups of spinach leaves
Method
Preheat oven to 180 degrees
Line a quiche dish with baking paper
Spread and Press mashed sweet potato into Quiche dish. This will act as the base.
Place this base in the oven to bake for around 10 minutes.
Combine eggs, salmon, onion in a bowl to combine. This can be down a food processor for speed.
Combine well.
Pour mixture into lined dish.
Sprinkle feta through, add tomato then top with spinach leaves.
Push veg down gently so they are moist.
Place in the oven on 180 for 35-40 mins or until texture is slightly spungey.
This is great served with Salad in summer, Roast Veg in Winter, or alone as a snack!
My Kids love this one in their lunch boxes!
