Super Simple Egg Cups
Im all for easy! These egg cups are really simple and can be made in larger quantities for easy grab and go meals.
These are an awesome addition to a grab and go breaky, lunch, dinner or snack!
2 Serves (4 Egg Cups)
What you'll need:
1 tsp Olive Oil
2 teaspoon Chives (chopped)
Salt & Black Pepper (to taste)
2/3 cup Baby Spinach (chopped)
75 grams Smoked Salmon (roughly chopped)
What to do:
Preheat the oven to 180ºC and lightly grease a muffin tin with olive oil.
In a small bowl, whisk together the eggs, chives, salt and pepper.
Add the spinach and then the smoked salmon to each muffin tin, then pour the egg mixture on top. Bake for 20 minutes.
Remove from the oven, let cool and enjoy!
