Zucchini Fritters (Gluten and Dairy Free)

These zucchini Fritters make a great breakfast or ideal lunch box ball of yumminess!


These fritters contain good levels of beta carotene, potassium, calcium as well as vitamin C.  


A  good helping of protein and healthy fat from the eggs makes them an ideal snack to keep us feeling satiated and nourished whenever we choose them!


Ingredients

  • 1 large or 2 small zucchini

  • 1 large carrot

  • 1 onion

  • 3 eggs

  • 2 rashes of good quality bacon

  • 2 tablespoons nutritional yeast (optional for cheesy flavour)

  • 3 x tablespoon of psyllium husk

  • Salt and pepper to taste


Method

  • Grate all vegetables or use food processor for speed.

  • Pour mixed veg mixture into paper towel or clean tea towel.  Squeeze out excess liquid (there’s a lot!)

  • Put mixture into bowl or back into food possessor. 

  • Add eggs, nutritional yeast, physillium, salt and pepper and bacon.  Combine well.

  • Heat frypan to medium heat. 

  • Add 2 x tablespoons of oil to pan.

  • Gently add heaped tablespoons to pan and gently press down to form patties.

  • Cook around 2 minutes before flipping to brown other side.


Enjoy for a grab and go breaky, lunch or easy dinner.
